Gluton Free Pizza Crust
2/3 cup warm water (105F)
1/2 cup tapioca flour
1/2 cup brown rice flour
3 tbsp bean flour
1 tbsp gluten-free dry yeast
2 tsp xanthan gum
1 tsp vinegar
1 tsp unflavored gelatin powder
1 tsp olive oil
1/2 tsp oregano
1/2 tsp salt
1/2 tsp sugar
1/4 tsp garlic powder
1/4 tsp basil
Directions:
First, remember to p reheat oven to 425F. Mix the rice flour, tapioca flour, bean flour, yeast, gelatin, salt, oregano, basil and garlic very thoroughly. Add water, sugar, olive oil and vinegar.
Use an electric mixer on medium speed to beat the mix for 3 minutes. Push dough out along a lightly oiled pizza pan.
Use extra rice flour on top of dough if you have trouble spreading the dough. The edges should be thicker than the middle. Keep this baking for 10 minutes.
Reduce oven temperature to 400F. Top with desired pizza sauce and topping. Keep it baking for another 20-25 minutes.

Sesame Honey Bread
|
|
1 Tbs. gluten-free yeast
|
|
1/2 cup wild red corn meal
|
|
3 1/4 cups Bread Mix
|
|
1/3 cup powdered low-fat milk
|
|
2 Tbs. toasted sesame seeds
|
|
1 1/2 tsp. soy lecithin
|
|
1/2 tsp. salt
|
|
1/2 tsp. xanthan gum
|
|
1 1/2 cups warm low-fat milk
|
|
5 Tbs. melted butter
|
|
1/4 cup honey
|
|
2 eggs
|
|
1 tsp. cider vinegar
|
|
Mix all ingredients in a bowl. Beat for 3 minutes or until dough is smooth. Spread dough into a 9 inch baking pan, cover with plastic and let dough rise. Preheat oven at 375 degrees and bake for 40-50 min or until bread sounds hollow when tapped.

Spice Cake
If you have a busy week make ahead and freeze.
Ingredients:
2 cups Gluten-Free Flour Mix
1 � cups sugar
1 teaspoon GF baking powder
1 teaspoon baking soda
1 teaspoon xanthan gum
1 teaspoon ground cinnamon
� teaspoon ground nutmeg
� teaspoon ground cloves
� teaspoon ground ginger
1 cup buttermilk or sour milk
� cup margarine or butter, softened
� cup shortening
� teaspoon vanilla
3 eggs
Preheat oven to 350F.
Combine flour, sugar, baking powder, baking soda, xanthan gum, cinnamon, nutmeg, cloves, and ginger.
Add buttermilk, margarine, shortening, and vanilla.
Beat on low speed till combined then two minutes on high speed.
Add eggs and beat two more minutes.
Pour into a greased 9" x 13" baking pan.
Bake for 30 to 35 minutes or until a toothpick comes out clean from the center.
Cool on a wire rack.
You can ice it with Duncan Hines Cream Cheese Frosting or just serve with Cool Whip or something similar or just eat it plain.
It's also great made into cupcakes and then freeze the extras to pull out for lunches.
